This sweet and crunchy vegan ice cream recipe is sure to satisfy your sweet tooth on a hot day. Even better: it's made with healthy ingredients!

"Nice cream" is a term used to describe ice cream (soft-serve style) that's made without dairy products by mixing frozen fruit. Bananas are typically the fruit of choice as they have a creamy texture when frozen and blended. You'll typically need a food processor to make it as it can be difficult to mix frozen fruit well with a standard blender.

What makes this recipe stand out is that it's a great mixture of both sweet and crunchy thanks to the maple syrup and the walnuts. You can even feel good about yourself while eating it since maple syrup is one of the healthier sweeteners and walnuts are a great source of healthy fats.

Ingredient Highlights

  • Frozen Bananas: Frozen bananas form the base of this recipe thanks to their creamy texture once blended. They're also health-promoting as they're a well-known great source of potassium. Like other whole-food fruit and vegetable sources, they're also a great source of fiber and antioxidants.
  • Maple Syrup: If you live in Canada like me, this is such an accessible way to add sweetness to a recipe. It's also considered healthier than other sweeteners thanks to containing some minerals and antioxidants. Do keep in mind that it's still high in sugar, so you should use it sparingly (which we do in this recipe).
  • Walnuts: These add a lot of texture to this recipe thanks to their crunchiness. Walnuts are also a great source of essential fatty acids (omega-3s and omega-6s).

How to Make Maple Walnut Nice Cream

This recipe comes together so quickly and simply.

First, place the frozen bananas, almond milk, maple syrup, and 2 tablespoon of walnuts into the food processor.

Blend it well until it reaches a smooth & creamy consistency.

Scoop it out into a separate container, and...that's it! Enjoy!

Tips

  • When storing any of the ingredients (or the finished product) in the freezer, make sure to keep it in an airtight container. This prevent freezer burn from happening.
  • If you've stored the finished recipe in the freezer for a while, make sure to thaw it out a bit before eating it again! I'd recommend about 20-30 minutes at room temperature. This is important as some of the walnuts can become rock hard in the freezer.

Equipment

  • 1 food processor
  • 1 airtight container

Ingredients
  

  • 4 bananas slice into pieces and frozen
  • 3 tablespoon almond milk unsweetened
  • ¼ cup maple syrup (4 tbsp)
  • ¼ cup walnuts (4 tbsp)

Instructions
 

  • Combine the frozen banana, almond milk, maple syrup, and 2 tablespoons of the walnuts into a food processor and mix until well-combined.
  • Scoop out into a separate container and fold in the remaining walnuts. Enjoy!

Notes

  • When freezing the bananas beforehand, make sure to store them in an airtight container. Do the same if freezing the finished recipe to eat at a later date. This helps prevent freezer burn.
  • If you froze the finished recipe to eat again at a later date, make sure to give it 20-30mins. at room temperature to thaw before digging in again. This is important for this recipe, as some of the walnut chunks can get rock hard in the freezer!
  • If desired, add more walnuts at the end of extra crunchiness.
