Tasty, healthy, and refreshing: this mango pico de gallo is the perfect tropical flavor bomb.

This is a twist on a classic Mexican salsa called pico de gallo. Traditionally it's made with tomato, onion, peppers, salt, lime juice, and cilantro. We add an extra touch to it by adding pieces of ripe mango. It might sound a bit strange because you're getting a whole bunch of flavors in one dish. Spicy, salty, sweet, sour...but trust me, the flavors all come together to form a delicious package.
This recipe is actually one of the first recipes I ever made. Not just when I switched to the vegan diet, but when I first started cooking. It's a symbol of me learning how to prepare my own food instead of having my parents or a restaurant do it for me. I hadn't made it in a while, so of course I wanted to revisit it after I went vegan. I'm happy to say it tastes as refreshing as ever!
Ingredients
- Red onions: The onions add a nice savory element to this dish. They are also super healthy, with red onions in particular being loaded with antioxidants. They also tend to last super long in the pantry, meaning you might already have these lying around if you cook salads or vegan dishes regularly.
- Tomato: Tomatoes also add a savory element to this dish, and contribute a lot of vitamins and minerals.
- Lime juice: The lime juice adds a distinct sour flavor to this recipe, while also adding a hint of sweetness. If you don't have store-bought lime juice but have an actual lime lying around in your fridge, feel free to get the lime juice from there instead.
- Cilantro: Also known as coriander, this is a classic Mexican herb. This adds a kind lemon-y flavor to a dish and is an integral part of the classic pico de gallo.
- Mangoes: These are a beloved fruit in Asia, Africa, and warmer parts of the Americas. These bring the hint of sweetness that takes this dish to the next level.
- Sea Salt: Adding in another flavor, we've got salt! While not meant to be the dominant taste of the dish, you'll appreciate the hint of saltiness brought in by the small amount of salt that we add.
- Jalapeño Pepper: As if we didn't have enough flavors already, we're rounding it up with a jalapeño! This adds a strong kick of spiciness to this dish.
How to Make Mango Pico De Gallo
Making mango pico de gallo is crazy simple. First do your mise en place. This includes dicing the onions and tomatoes, seeding and chopping the jalapeno, chopping the cilantro, and slicing the cheeks of the mangoes into chunks. Then simply throw everything into a mixing bowl and combine. Voila, you've got your mango pico de gallo!
Tips
- While I highly recommend including a jalapeño pepper to bring out the classic spiciness of a pico de gallo, I understand that the taste can be overwhelming for those who don't have a certain spice tolerance. Feel free to omit it, or include just a quarter or half of the jalapeno at first. Once you get more accustomed to the spice level, you can increase the amount next time you make this dish.

Ingredients
- ½ red onion diced
- 1 tomato diced
- 1 jalapeño pepper seeded and chopped, optional (or use less if you want less heat)
- 2 tablespoon lime juice
- ½ cup chopped cilantro
- ½ teaspoon sea salt
- 2 ripe mangoes sliced into chunks (about 165g)

- In a medium bowl, add all the ingredients and mix well.
