Easy Bok Choy Stir Fry

If you're strapped for time, this easy bok choy stir fry is the perfect quick and nourishing weeknight meal.

Bok Choy is a signature Chinese vegetable, and you'll see it used all over the place in Asia. Thanks to its popularity and being convenient to grow (it can actually be grown year-round), it has also become a highly accessible vegetable all over the world.

The benefits of bok choy don't stop there though. It's incredibly nutritious, being part of a renowned family of vegetables known as cruciferous vegetables. Cruciferous vegetables have numerous health benefits, and are low in calories. This makes them a great choice for those who want to improve their health by fighting off cancer-causing compounds, reducing their caloric intake, and boosting their immunity.

On top of all this, bok choy is super tasty and satisfying when prepared the right way!

How to Make Easy Bok Choy Stir Fry

First off, prep all your ingredients: Chop 2 heads of bok choy into smaller pieces. Mince a piece of ginger and 4 garlic cloves.

Then heat a skillet (or other type of stove-top container) under medium heat. Once the skillet is hot, add 2 tablespoons of avocado oil and the bok choy. Cook and frequently stir the bok choy until it's slightly softened (I typically give it 5 minutes).

Now add the garlic & ginger to the skillet. Include 2 tablespoons of low-sodium soy sauce as well and half a teaspoon of salt. Continue cooking and stirring the dish for 5 minutes.

Remove it from the heat...and that wraps it up for the cooking portion! Easy, wasn't it?

When serving, sprinkle sesame seeds on top for added pizzazz.

Tips

  • Make sure you slice the bok choy into bite-size pieces. Bok choy can be quite large, and it's not convenient to cook or eat it whole. I even remember almost having a choking episode as a child when I tried to eat an entire leaf of bok choy. So make sure to cut into smaller pieces before you start cooking.
  • Serve with rice. This pairs very well with steaming hot rice or a rice-based dish.

Equipment

  • chef's knife
  • large skillet or other cooking pot
  • Spatula

Ingredients
  

  • 2 heads bok choy about 850g
  • 2 tablespoon avocado oil or other neutral oil such as canola oil
  • 1 piece ginger about 1-inch in length, minced
  • 3 garlic cloves minced
  • 2 tablespoon soy sauce preferably low-sodium
  • ½ teaspoon salt
  • 1 tablespoon sesame seeds

Instructions
 

  • Heat your skillet (or other container) under medium-high heat.
  • Once skillet is hot, add oil and bok choy. Cook while stirring frequently until slightly softened (5 minutes).
  • Add garlic, ginger, soy sauce, and salt. Continue cooking and stirring for 5 minutes.
  • Remove from heat and transfer cooked ingredients to a serving plate.
  • Sprinkle sesame seeds on top and enjoy! This tastes great when served with steaming hot rice.
